Today I've got a yummy recipe for you: a dessert that can be easily thrown together at the last minute when you suddenly decide to invite your in-laws' over for dinner, for example! It's Betty Crocker's Banana Cream Pie, but my husband thought it was so heavenly that I changed it's name to a Banana Dream Pie. Here's the recipe...
Banana Dream Pie
1 baked pie crust
4 large egg yolks, slightly beaten
2/3 cup sugar
1/4 cup cornstarch
1/2 teaspoon salt
3 cups milk
2 Tablespoons butter, softened
1 Tablespoon vanilla
3 large bananas
Whipped cream for topping
- Prepare baked pie crust.
- Beat egg yolks with fork in small bowl. Mix sugar, cornstarch and salt in saucepan. Gradually stir in milk. Cook over mediium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
- Immediately stir at least half of the hot mixture gradually into egg yolks, stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat. Stir in butter and vanilla and press plastic wrap onto filling in saucepan. Refrigerate until room temperature.
- Slice 2 large bananas into pie shell. Pour filling over bananas. Garnish with banana slices. Top each piece of pie with whipped cream and enjoy!
Pictured below is another one of my creations, even more beautiful and delicious than my Banana Dream Pie. I definitely won't be sharing this recipe, but to make them this cute I'll let you in one secret, it does take lots and lots of love. It is the only way!
